Ingredients

  • 1 head Cauliflower
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 4 large Eggs
  • 1 cup Cheddar cheese
  • 0.25 cup Milk
  • 0.25 cup Parmesan cheese
  • 2 tablespoons Chopped parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and grease a medium-sized baking dish with a small amount of olive oil or cooking spray.

Step 2

Cut the cauliflower into small florets. Wash and dry them thoroughly.

Step 3

Toss the cauliflower florets in a mixing bowl with olive oil, salt, black pepper, and garlic powder to coat them evenly.

Step 4

Spread the seasoned cauliflower evenly onto a baking sheet and roast in the preheated oven for 15-20 minutes, stirring halfway through, until golden brown and tender.

Step 5

While the cauliflower roasts, whisk together the eggs, milk, and cheddar cheese in a medium-sized bowl. Stir in the Parmesan cheese.

Step 6

Once the cauliflower is roasted, transfer it to the greased baking dish and pour the egg and cheese mixture evenly over the top.

Step 7

Return the baking dish to the oven and bake for an additional 10-12 minutes, or until the eggs are set and the top is golden and bubbly.

Step 8

Remove from the oven, let cool slightly, and garnish with chopped parsley if desired.

Step 9

Serve warm and enjoy your Cauliflower and Egg Cheese dish!
