  • 1 medium head Cauliflower
  • 3 medium Carrots
  • 1 small Yellow onion

  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Chop the cauliflower into small florets. Peel and slice the carrots into thin rounds. Dice the onion and mince the garlic cloves.

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 3-4 minutes, until fragrant and softened.
