Ingredients

  • 1 head cauliflower
  • 500 grams Brussels sprouts
  • 3 tablespoons olive oil

  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 100 grams grated Parmesan cheese
  • 100 grams grated Gruyère cheese
  • 1 cup breadcrumbs
  • 50 grams pine nuts
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Cut the cauliflower into small florets and halve the Brussels sprouts. Place them on a baking sheet and toss with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

Roast the vegetables in the oven for 20 minutes or until tender and lightly caramelized, flipping halfway through.
