  • 1 medium head Cauliflower
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 2 cups Vegetable broth
  • 1 cup Unsweetened almond milk (or any milk of choice)
  • 2 tablespoons Nutritional yeast (optional, for cheesy flavor)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 12 ounces Pasta of choice
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil. Cut the cauliflower into florets, discarding the tough core.

Step 2

Add the cauliflower florets to the boiling water and cook for about 8-10 minutes, or until tender. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Sauté the garlic cloves for 1-2 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic.
