Ingredients

  • 4 medium russet potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 pound beef sirloin (or ribeye), diced
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 stalks green onions, sliced (optional, for garnish)

Directions

Step 1

Wash the potatoes thoroughly and dice them into 1/2-inch cubes. Pat dry with a kitchen towel to remove excess moisture.

Step 2

Heat a large cast-iron skillet over medium heat and add 2 tablespoons of olive oil and 1 tablespoon of butter.

Step 3

Once the butter has melted, add the diced potatoes to the skillet. Season with a pinch of salt and black pepper. Cook the potatoes for 10-12 minutes, stirring occasionally, until golden and crisp on the outside. Remove the potatoes from the skillet and set aside on a plate.

Step 4

In the same skillet, raise the heat to medium-high and add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter.

Step 5

Add the diced beef to the skillet and season with 1 teaspoon of salt, smoked paprika, cumin, and thyme. Sear the beef for 5-6 minutes, stirring occasionally, until browned on the outside. Remove the beef from the skillet and set aside with the potatoes.

Step 6

Reduce the heat to medium and add the diced yellow onion, green bell pepper, and red bell pepper to the skillet. Sauté for 5 minutes, stirring frequently, until the vegetables become tender.

Step 7

Add the minced garlic to the skillet and cook for an additional 1 minute, stirring constantly to prevent burning.

Step 8

Return the cooked potatoes and beef to the skillet. Toss everything together and adjust seasoning with the remaining 1/2 teaspoon of salt and black pepper to taste.

Step 9

Cook for another 2-3 minutes, allowing the flavors to meld together. Turn off the heat and sprinkle sliced green onions over the top, if desired.

Step 10
