Wash the potatoes thoroughly and dice them into 1/2-inch cubes. Pat dry with a kitchen towel to remove excess moisture.
Heat a large cast-iron skillet over medium heat and add 2 tablespoons of olive oil and 1 tablespoon of butter.
Once the butter has melted, add the diced potatoes to the skillet. Season with a pinch of salt and black pepper. Cook the potatoes for 10-12 minutes, stirring occasionally, until golden and crisp on the outside. Remove the potatoes from the skillet and set aside on a plate.
