Ingredients

  • 170 grams Unsalted butter
  • 200 grams Light brown sugar
  • 50 grams Granulated sugar
  • 2 pieces Large eggs
  • 2 teaspoons Vanilla extract
  • 190 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Salt
  • 150 grams Toffee bits (such as Heath or Skor)
  • 70 grams Chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and let cool slightly.

Step 3

In a large mixing bowl, whisk together the melted butter, light brown sugar, and granulated sugar until well combined and smooth.

Step 4

Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

Step 5

In a separate bowl, combine the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined (do not overmix).

Step 6

Gently fold in the toffee bits and chopped nuts (if using).

Step 7

Pour the batter into the prepared baking pan and spread evenly with a spatula.

Step 8

Bake in the preheated oven for 22–25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs. Avoid overbaking for a chewy texture.

Step 9

Remove the blondies from the oven and let cool completely in the pan on a wire rack.

Step 10

Once cooled, use the parchment paper overhang to lift the blondies out of the pan. Slice into 12 squares or desired portions. Serve and enjoy!
