  • 1 kg pork belly
  • 0.5 cup soy sauce
  • 0.25 cup white vinegar
  • 1 cup water
  • 6 pieces garlic cloves
  • 3 pieces bay leaves
  • 1 tsp whole black peppercorns
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • 1 piece onion (optional)

Directions

Step 1

Cut the pork belly into bite-sized cubes, roughly 2 inches, and set aside.

Peel and smash the garlic cloves. If using an onion, peel and slice it thinly.

Step 3

In a large bowl, mix soy sauce, vinegar, and garlic. Add the pork and marinate for at least 30 minutes, or overnight for deeper flavor.

Heat the vegetable oil in a large pot or deep skillet over medium heat. Add the marinated pork and sear it until lightly browned on all sides. Remove excess marinade and reserve.
