Ingredients

  • 4 pieces Catfish fillets
  • 4 pieces Whole wheat buns
  • 0.5 cups Cornmeal
  • 0.25 cups All-purpose flour
  • 1 teaspoons Paprika
  • 1 teaspoons Garlic powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Buttermilk
  • 2 tablespoons Vegetable oil
  • 1 cup Red cabbage, shredded
  • 1 medium Carrot, grated
  • 2 tablespoons Low-fat mayonnaise
  • 1 tablespoons Apple cider vinegar
  • 1 teaspoons Honey
  • 12 pieces Dill pickle slices

Directions

Step 1

In a shallow dish, combine cornmeal, flour, paprika, garlic powder, salt, and black pepper. Mix well.

Step 2

Pour the buttermilk into another shallow dish.

Step 3

Pat the catfish fillets dry with a paper towel. Dip each fillet into the buttermilk and then coat evenly with the cornmeal mixture. Set the coated fillets aside on a plate.

Step 4

In a large nonstick skillet, heat the vegetable oil over medium heat. Once the oil is hot, add the catfish fillets to the skillet (work in batches if necessary to avoid overcrowding). Cook for 3–4 minutes on each side, or until the coating is golden brown and the fish flakes easily with a fork.

Step 5

While the fish is cooking, prepare the slaw. In a mixing bowl, combine the shredded red cabbage, grated carrot, low-fat mayonnaise, apple cider vinegar, and honey. Mix until the slaw is well-coated. Season with a pinch of salt if needed.

Step 6

To assemble the sandwiches, place a cooked catfish fillet onto the bottom half of a whole wheat bun. Top the fillet with a scoop of slaw and a few dill pickle slices. Place the top half of the bun on the sandwich.

Step 7

Serve immediately and enjoy!
