  • 2 cups Frozen mixed vegetables (corn, peas, carrots)
  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 2 cups Shredded cheddar cheese
  • 0.5 teaspoons Paprika

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and roughly chop the russet potatoes. Place them in a large pot of salted water and bring to a boil. Reduce heat to a simmer and cook until tender, about 15–20 minutes.

While the potatoes are cooking, heat the vegetable oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 5 minutes.
