Ingredients

  • 3 pounds Yukon Gold potatoes
  • 6 whole Garlic cloves
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 0.5 cup Whole milk
  • 2 teaspoons Salt
  • 1 teaspoon Freshly ground black pepper
  • 2 tablespoons Fresh chives (optional, for garnish)

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into uniform chunks, roughly 2 inches in size. Place the potato chunks in a large pot and cover with cold water.

Step 2

Add 2 teaspoons of salt to the water. Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are fork-tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, peel the garlic cloves. In a small saucepan, melt 2 tablespoons of the butter over low heat. Add the garlic cloves and cook gently for about 10 minutes, stirring occasionally, until the garlic is soft and lightly golden but not browned. Set aside.
