Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice, freshly squeezed
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Honey
  • 2 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.25 cup Red onion, thinly sliced
  • 0.5 cup Kalamata olives, pitted and halved
  • 2 tablespoons Capers, drained
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped

Directions

Step 1

Bring a large pot of salted water to a boil over medium-high heat. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Drain and set the shrimp aside to cool slightly.

Step 2

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, honey, and minced garlic. Season the dressing with salt and black pepper to taste.

Step 3

In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, and capers.

Step 4

Add the cooked shrimp to the bowl of vegetables, then pour the dressing over the top. Gently toss everything together to coat evenly.

Step 5

Sprinkle the crumbled feta cheese, parsley, and dill over the salad. Toss lightly again to combine.

Step 6

Serve the shrimp and caper salad chilled or at room temperature, either on its own or with crusty bread on the side.
