Ingredients

  • 12 pieces round chocolate or vanilla sandwich cookies
  • 1.5 cups white chocolate chips
  • 12 pieces candy-coated chocolate buttons (e.g., M&Ms or Smarties)
  • 12 pieces dark chocolate chips
  • 0.25 teaspoon red food coloring gel (optional, for effect)
  • 1 piece toothpick
  • 1 sheet parchment paper

Directions

Step 1

Line a baking sheet or flat tray with a sheet of parchment paper and set aside.

Step 2

Melt the white chocolate chips in a heatproof bowl by microwaving in 20-second intervals, stirring in between, until smooth and fully melted.

Step 3

Take one sandwich cookie at a time and dip the top of the cookie into the melted white chocolate, ensuring the top surface is fully coated. Lay each coated cookie onto the parchment paper with the chocolate-coated side facing up.

Step 4

While the white chocolate is still soft, immediately place a candy-coated chocolate button in the center of each cookie to act as the iris of the eye.

Step 5

Press a single dark chocolate chip (narrow tip down) into the center of the candy-coated button to create the pupil.

Step 6

If you’d like to make the eyes appear bloodshot, dip the tip of a toothpick into the red food coloring gel. Lightly draw thin, vein-like lines radiating outward from the candy-coated iris using the toothpick on the white chocolate surface.

Step 7

Allow the cookies to set at room temperature for 20–30 minutes, or refrigerate them for 10–15 minutes until the white chocolate is firm and dry to the touch.

Step 8

Once the Cat’s Eyes are fully set, carefully lift them off the parchment paper and arrange them on a serving platter.

Step 9

Serve immediately or store in an airtight container at room temperature for up to 3 days.
