Ingredients

  • 2 hearts Romaine lettuce
  • 2 cups Crusty bread (for croutons)
  • 3 tablespoons Olive oil
  • 1 cup Parmesan cheese
  • 2 cloves Garlic cloves (minced)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 2 fillets Anchovy fillets (optional)
  • 1 yolk Egg yolk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the crusty bread into 1-inch cubes to make croutons. Toss the bread cubes in 2 tablespoons of olive oil, a pinch of salt, and half of the minced garlic.

Spread the bread cubes on a baking sheet in a single layer and bake for 8-10 minutes, or until golden and crispy. Set aside to cool.

While the croutons are baking, rinse and dry the Romaine lettuce hearts. Tear the lettuce into bite-sized pieces and place them in a large salad bowl.
