  • 2 sprigs Fresh thyme sprigs

Directions

Step 1

Remove the filet mignon steaks from the refrigerator, pat them dry with paper towels, and let them come to room temperature for 30 minutes.

Season both sides of each steak generously with kosher salt and freshly ground black pepper.

Preheat a cast iron skillet over medium-high heat for about 5 minutes until it is sizzling hot.
