Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter
  • 1.5 cups Granulated sugar
  • 4 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Whole milk
  • 2 cups Ricotta cheese (whole milk)
  • 1 cup Powdered sugar
  • 1 teaspoons Orange zest
  • 0.5 cups Mini chocolate chips
  • 0.5 cups Chopped candied fruit
  • 4 tablespoons Marsala wine or orange liqueur
  • 1 cup Whipping cream
  • 0.5 cups Almonds (toasted and sliced)
  • 8 whole Maraschino cherries

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set them aside.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, cream the butter and sugar together using a hand or stand mixer until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time to the butter mixture, beating well after each addition. Then mix in the vanilla extract.

Step 5

Add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Begin and end with the dry ingredients. Mix just until combined; do not overmix.

Step 6

Divide the batter evenly between the prepared pans and smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Step 7

Remove the cakes from the oven and let cool in the pans for 10 minutes. Then invert onto a wire rack to cool completely.

Step 8

While the cakes cool, prepare the ricotta filling. In a medium bowl, mix the ricotta cheese, powdered sugar, and orange zest until smooth. Fold in the mini chocolate chips and candied fruit. Chill until ready to use.

Step 9

Trim the tops of the cooled cakes to create even layers, if necessary. Place one cake layer on a serving plate and brush with 2 tablespoons of Marsala wine or orange liqueur.

Step 10

Spread a generous layer of the ricotta filling on top of the first layer. Add the second cake layer on top, brush it with the remaining 2 tablespoons of liqueur, and frost the entire cake with the whipped cream.

Step 11

Press the sliced almonds onto the sides of the cake, covering it completely for a decorative crust.

Step 12

Finish by topping the cake with maraschino cherries arranged around the edges or center. Chill the cake for at least 2 hours to allow the flavors to meld.

Step 13

Slice and serve chilled. Enjoy this decadent cassata-inspired cake!
