Ingredients

  • 450 grams Pork loin
  • 3 tablespoons Soy sauce
  • 1 tablespoon Cornstarch
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 2 whole Bell peppers
  • 1 large Carrot
  • 150 grams Snow peas
  • 2 stalks Green onions
  • 100 grams Roasted cashews
  • 2 tablespoons Hoisin sauce
  • 1 teaspoon Rice vinegar
  • 1 teaspoon Brown sugar
  • 1 teaspoon Sesame oil
  • 4 servings Cooked rice

Directions

Step 1

Slice the pork loin into thin strips and place in a bowl.

Step 2

Add 2 tablespoons of soy sauce and the cornstarch to the pork, mixing until evenly coated. Let marinate for 10 minutes.

Step 3

While the pork marinates, mince the garlic and ginger. Slice the bell peppers and carrot into thin strips, trim the ends off the snow peas, and chop the green onions into 1-inch pieces.

Step 4

In a small bowl, prepare the sauce by mixing the remaining 1 tablespoon of soy sauce, hoisin sauce, rice vinegar, brown sugar, and sesame oil. Set aside.

Step 5

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes or until cooked through. Remove the pork from the skillet and set aside.

Step 6

Add the remaining 1 tablespoon of vegetable oil to the skillet. Toss in the garlic and ginger and stir-fry for 30 seconds until aromatic.

Add the bell peppers, carrot, and snow peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

Step 8

Return the pork to the skillet, along with the sauce. Stir everything together and cook for an additional 2-3 minutes until the sauce coats all the ingredients.

Step 9

Stir in the roasted cashews and half of the chopped green onions, reserving the other half for garnish.

Step 10

Serve the stir fry over bowls of steamed rice, garnished with the remaining green onions. Enjoy!
