Ingredients

  • 1 cup Raw cashews
  • 2 tablespoons Vegetable oil
  • 1 medium, finely chopped Onion
  • 3 cloves, minced Garlic
  • 1 teaspoon, grated Ginger
  • 2 medium, pureed Tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon (or to taste) Salt
  • 2 cups Water
  • 2 tablespoons, chopped (optional, for garnishing) Cilantro

Directions

Step 1

Soak the raw cashews in warm water for 15 minutes. After soaking, drain the water and blend the cashews with 1/4 cup of fresh water into a smooth paste. Set aside.

Step 2

Heat the vegetable oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown, about 6-8 minutes.

Step 3

Add the minced garlic and grated ginger to the pan. Sauté for another 1-2 minutes until fragrant.

Stir in the pureed tomatoes, ground cumin, ground coriander, turmeric powder, and chili powder. Cook the mixture for about 5-7 minutes, stirring occasionally, until the oil starts to separate from the masala.

Lower the heat and add the prepared cashew paste to the pan. Mix well to combine.

Gradually pour in the 2 cups of water, stirring constantly to avoid lumps. Bring the gravy to a gentle simmer.

Add the garam masala and salt. Stir well and let the gravy cook for another 5-8 minutes, stirring occasionally, until it thickens to your desired consistency.
