Ingredients

  • 12 sheets Phyllo pastry sheets
  • 120 grams Unsalted butter, melted
  • 200 grams Raw cashews
  • 60 ml Honey
  • 50 grams Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cardamom
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a large baking tray with parchment paper.

Step 2

In a food processor, blend the cashews until they are coarsely ground. Add the sugar, cinnamon, cardamom, and vanilla extract, then process briefly to combine into a slightly crumbly filling mixture.

Step 3

Prepare a clean work surface and have a damp kitchen towel or plastic wrap handy to cover the phyllo sheets and prevent them from drying out.

Step 4

Lay one phyllo sheet flat on your work surface and brush it lightly with melted butter, ensuring full coverage. Place another phyllo sheet on top of the first and brush with butter again.

Spoon about 1 to 1.5 tablespoons of the cashew filling along one short end of the phyllo stack, leaving a small margin at the edges.
