Ingredients

  • 4 pieces Mahi Mahi fillets
  • 1 cup Raw cashews
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 1 can Olive oil spray
  • 4 pieces Lemon wedges

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil spray.

Step 2

Place the raw cashews in a food processor and pulse until finely chopped, but not powdery. You want a coarse meal consistency.

Step 3

In a shallow bowl, combine the chopped cashews, panko breadcrumbs, grated Parmesan cheese, salt, black pepper, and garlic powder. Mix well to form the crust mixture.

Step 4

In another shallow bowl, beat the eggs until well combined. Place the flour in a third shallow bowl.

Step 5

Pat the mahi mahi fillets dry with a paper towel. Dredge each fillet in the flour, shaking off any excess.

Step 6

Dip the floured fillet into the beaten egg, ensuring it is fully coated, and then press it firmly into the cashew mixture, coating both sides evenly.

Step 7

Place the coated fillets on the prepared baking sheet, ensuring there is space between them for even cooking.

Step 8

Lightly spray the tops of the fillets with olive oil spray to help the crust turn golden during baking.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the fish is cooked through and flakes easily with a fork, and the crust is golden brown.

Step 10

Remove the fillets from the oven and let them rest for 2 minutes before serving.

Step 11

Serve the cashew crusted mahi mahi with fresh lemon wedges for a zesty finish.
