Ingredients

  • 1 pound Boneless, skinless chicken breast
  • 2 tablespoons Cornstarch
  • 3 tablespoons Soy sauce
  • 3 tablespoons Vegetable oil
  • 3 pieces Garlic cloves, minced
  • 1 teaspoon Ginger, minced
  • 1 piece Red bell pepper, diced
  • 2 cups Broccoli florets
  • 1 cup Unsalted roasted cashews
  • 3 tablespoons Oyster sauce
  • 1 cup Chicken broth
  • 1 tablespoon Honey
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, sliced
  • 4 cups Cooked white rice, for serving

Directions

Step 1

Cut the chicken breast into bite-sized pieces and place in a small bowl. Add cornstarch and 1 tablespoon of soy sauce; toss to coat evenly. Set aside to marinate for 10 minutes.

Step 2

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken in batches and stir-fry until cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger and sauté for 30 seconds until fragrant.

Step 4

Add the diced red bell pepper and broccoli florets to the skillet. Stir-fry for 4-5 minutes, or until the vegetables are tender but still crisp.

Step 5

Return the cooked chicken to the skillet. Add the cashews and stir to combine.

Step 6

In a small bowl, whisk together the oyster sauce, chicken broth, remaining 2 tablespoons of soy sauce, honey, and sesame oil. Pour the sauce over the chicken and vegetables in the skillet.

Step 7

Stir everything together and let the sauce simmer for 3-4 minutes until slightly thickened and everything is well-coated.

Step 8

Remove the skillet from heat and garnish with sliced green onions.
