  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 cup frozen peas and carrots mix
  • 1 cup cashews, roasted and unsalted
  • 1.5 cups shredded sharp cheddar cheese
  • 3 green onions, sliced
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little oil or non-stick cooking spray.

Step 2

Cut the chicken breasts into bite-sized pieces and season with a pinch of salt and pepper.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5-7 minutes. Remove the chicken and set aside.
