Ingredients

  • 200 grams Cashew nuts
  • 120 grams Sugar
  • 50 ml Water
  • 1 teaspoon Ghee (clarified butter)
  • 0.25 teaspoon Cardamom powder
  • 2 sheets Edible silver leaf (optional)

Directions

Step 1

Begin by grinding the cashew nuts into a fine powder using a food processor or blender. Be careful not to overblend to avoid releasing the oils from the cashews.

Step 2

In a heavy-bottomed pan or non-stick skillet, combine the sugar and water over medium heat. Stir until the sugar dissolves completely, forming a sugar syrup.

Step 3

Continue cooking the syrup on medium heat until it reaches a one-string consistency. To test this, take a drop of the syrup between your thumb and forefinger, and check if a single thread is formed when you pull your fingers apart.

Step 4

Once the syrup is ready, lower the heat and add the cashew powder gradually. Stir continuously to ensure there are no lumps.

Step 5

Cook the mixture on low heat, stirring constantly, until it thickens into a dough-like consistency and starts to leave the sides of the pan. This should take about 8-10 minutes.

Step 6

Add the ghee and cardamom powder to the mixture, and mix well for another 1-2 minutes.

Step 7

Turn off the heat and let the mixture cool slightly until it's comfortable to handle.

Step 8

Place the dough onto a sheet of parchment paper or a greased surface. Roll it out gently with a rolling pin into an even layer, about 5 mm thick.

Step 9

If using edible silver leaf, carefully place the sheets over the top of the rolled dough and smooth them down gently with a clean, dry cloth.

Step 10

Allow the burfi to cool completely, then cut it into diamond shapes or your desired pattern using a sharp knife.

Step 11

Serve immediately or store in an airtight container at room temperature for up to a week.
