Ingredients

  • 4 tablespoons butter
  • 1 large (chopped) yellow onion
  • 3 (chopped) celery stalks
  • 2 (minced) garlic cloves
  • 1 cup (roughly chopped) unsalted cashews
  • 8 cups (cut into 1-inch cubes) day-old rustic bread
  • 2 cups chicken or turkey stock
  • 0.25 cup (chopped) fresh parsley
  • 2 tablespoons (chopped) fresh sage
  • 2 teaspoons (chopped) fresh thyme
  • 0.5 cup dried cranberries
  • 2 (beaten) eggs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

Step 2

In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, and sauté for 5–7 minutes or until softened. Add the minced garlic and chopped cashews, and cook for an additional 2 minutes, stirring frequently.

Step 3

Place the bread cubes in a large mixing bowl. Pour the onion, celery, garlic, and cashew mixture over the bread cubes.

Step 4

In a separate medium bowl, whisk together the stock, eggs, parsley, sage, thyme, salt, and pepper. Pour this mixture over the bread cubes, stirring gently to combine.

Step 5

Fold in the dried cranberries, ensuring they are evenly distributed. Let the mixture sit for 10 minutes to allow the bread to soak up the liquid.

Step 6

Transfer the stuffing mixture to the prepared baking dish, spreading it out evenly. Cover with foil.

Step 7

Bake in the preheated oven for 30 minutes. Remove the foil and bake uncovered for an additional 15 minutes or until the top is golden brown.

Step 8

Remove from the oven and let the stuffing cool for 5–10 minutes before serving. Serve warm as a delicious side dish to complement your turkey!
