Ingredients

  • 60 grams Instant Casein Protein Powder
  • 120 milliliters Cold Skimmed Milk
  • 120 grams Greek Yogurt
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Unflavored Gelatin Powder
  • 3 tablespoons Water
  • 60 milliliters Whipping Cream
  • 50 grams Fresh Berries (optional for garnish)
  • 5 leaves Mint Leaves (optional for garnish)

Directions

Step 1

In a small bowl, add 3 tablespoons of cold water and sprinkle the gelatin powder over it. Let it bloom for 5 minutes.

Step 2

In a saucepan over medium heat, warm the skimmed milk until it begins to steam, but do not boil.

Step 3

Remove the milk from heat and stir in the bloomed gelatin until completely dissolved. Set aside to cool slightly.

Step 4

In a large mixing bowl, combine the casein protein powder, Greek yogurt, honey, and vanilla extract. Stir until smooth.

Step 5

Gradually add the cooled milk-gelatin mixture to the protein and yogurt mix, stirring constantly to prevent lumps.

Step 6

In a separate bowl, whip the cold whipping cream until soft peaks form.

Step 7

Gently fold the whipped cream into the casein mixture until fully incorporated.

Step 8

Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours to set.

Step 9

Before serving, garnish with fresh berries and mint leaves if desired.
