Ingredients

  • 1 pound carrots
  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup pecans, chopped
  • 1 teaspoon olive oil
  • 0.25 teaspoon cayenne pepper (optional)

Directions

Step 1

Peel the carrots and cut them into evenly sized sticks, about 2-3 inches long.

Step 2

In a medium pot, bring salted water to a boil. Add the carrots and cook for 5-7 minutes until just tender. Drain and set aside.

Step 3

In a large skillet over medium heat, melt 1 tablespoon of butter. Add the honey, brown sugar, 1/4 teaspoon of salt, cinnamon, and nutmeg. Stir to combine and form a glaze.

Step 4

Add the drained carrots to the skillet and toss to coat them in the glaze. Cook for 5 more minutes, stirring frequently, until the carrots are well-coated and heated through. Remove from heat and transfer to a serving dish.

Step 5

In a small skillet, melt the remaining tablespoon of butter with the olive oil over medium heat. Add the chopped pecans, remaining 1/4 teaspoon of salt, and cayenne pepper (if using). Toast the pecans for 3-4 minutes, stirring frequently, until fragrant and lightly crispy.

Step 6

Sprinkle the spiced pecan topping over the glazed carrots.

Step 7

Serve warm and garnish with fresh parsley, if desired.
