  • 50 grams Unsalted butter
  • 60 milliliters Fresh orange juice

  • 6 large leaves Fresh basil leaves

  • 0.25 teaspoon Black pepper
  • 500 milliliters Water
  • 10 pieces Ice cubes

Directions

Step 1

Peel the carrots and trim both ends. Cut the carrots into even-sized pieces, either sticks or rounds, roughly 5 cm (2 inches) long for sticks or 0.5 cm (1/4 inch) thick for rounds.

Step 2

Bring 500 milliliters of water to a rolling boil in a medium-sized saucepan. Add the carrots and cook until just tender, about 5-7 minutes.

While the carrots are boiling, fill a large bowl with cold water and add the ice cubes to make an ice bath.
