Ingredients

  • 500 grams carrots
  • 2 tablespoons olive oil
  • 1 teaspoon whole cumin seeds
  • 1 teaspoon yellow mustard seeds
  • 2 cloves garlic
  • 0.5 teaspoons ground turmeric
  • 0.5 teaspoons ground coriander
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 60 milliliters water
  • 2 tablespoons fresh cilantro
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Peel the carrots and cut them into evenly-sized sticks or rounds, approximately 0.5 cm thick.

Step 2

Finely mince the garlic cloves and chop the fresh cilantro. Set aside for later use.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the cumin seeds and mustard seeds and sauté for 30 seconds until they start to pop and release their aroma.

Add the minced garlic to the skillet and sauté for another 30 seconds, being careful not to burn it.
