  • 0.5 teaspoons Garlic powder
  • 0.25 cup Vegetable oil
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish or casserole dish with cooking spray or a small amount of vegetable oil.

Step 2

Peel the carrots, zucchini, and russet potatoes. Grate them using the large holes of a box grater or a food processor with a grating attachment.
