Ingredients

  • 500 grams carrots
  • 20 grams unsalted butter
  • 100 milliliters whipping cream
  • 2 eggs
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 20 grams parmesan cheese (grated)
  • 10 grams breadcrumbs
  • 1 teaspoons vegetable oil

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease four ramekins (or small molds) with the vegetable oil, then coat the inside lightly with breadcrumbs. Shake off any excess breadcrumbs and set aside.

Step 2

Peel the carrots and cut them into small chunks to ensure even cooking. Place the carrots in a pot of boiling water with a pinch of salt and cook for 15-20 minutes or until completely tender.

Step 3

Once the carrots are cooked, drain them thoroughly and transfer them to a blender or food processor. Add the unsalted butter, whipping cream, eggs, ground nutmeg, salt, and black pepper. Blend until smooth, scraping down the sides as needed.

Step 4

Divide the carrot mixture evenly among the prepared ramekins. Sprinkle the tops with grated parmesan cheese.

Step 5

Place the ramekins into a deep baking dish. Pour hot water into the dish until it reaches halfway up the sides of the ramekins, creating a water bath.

Step 6

Carefully transfer the baking dish to the preheated oven. Bake for 25-30 minutes or until the timbales are set and slightly golden on top.

Step 7

Remove the ramekins from the water bath and allow them to cool for 5 minutes. Gently run a knife around the edge of each timbale to loosen it from the ramekin.

Step 8

Invert each ramekin onto a serving plate to release the timbale. Serve warm as a side dish or an appetizer, garnished with fresh herbs if desired.
