Ingredients

  • 4 medium carrots
  • 0.5 cup sunflower seeds
  • 0.5 cup rolled oats
  • 0.25 cup chickpea flour
  • 2 cloves garlic clove
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and grate the carrots into a large mixing bowl.

In a dry skillet, lightly toast the sunflower seeds over medium heat until fragrant, about 3-5 minutes. Let them cool, then chop coarsely or pulse in a food processor. Add to the bowl with the carrots.

Add rolled oats, chickpea flour, minced garlic, ground cumin, paprika, onion powder, ground black pepper, and salt to the bowl with the carrots and sunflower seeds.
