Ingredients

  • 4 cups (sliced) carrots
  • 6 tablespoons butter
  • 1 cup (diced) onion
  • 2 cloves (minced) garlic
  • 1 cup (diced) celery
  • 1.5 cups chicken or vegetable broth
  • 6 cups dry stuffing mix (herb-flavored)
  • 2 large eggs
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons (chopped) parsley
  • 0.25 cup grated Parmesan cheese

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the sliced carrots and cook for 8–10 minutes until tender. Drain and set aside.

Step 3

In a large skillet, melt 4 tablespoons of butter over medium heat. Add the diced onion, minced garlic, and diced celery. Sauté for 5–7 minutes until softened and fragrant.

Step 4

Add the chicken or vegetable broth to the skillet and bring to a simmer. Remove from heat and stir in the dry stuffing mix until evenly moistened.

Step 5

In a large mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and parsley. Add the cooked carrots and stuffing mixture to the bowl, stirring to combine evenly.

Step 6

Transfer the mixture to the prepared baking dish. Dot the top with the remaining 2 tablespoons of butter and sprinkle with grated Parmesan cheese.

Step 7

Bake in the preheated oven for 30–35 minutes, or until the top is golden and the casserole is heated through.

Step 8

Let the casserole cool for 5 minutes before serving. Garnish with additional parsley if desired. Enjoy!
