Ingredients

  • 800 grams carrots
  • 1 medium onion
  • 2 pieces garlic cloves
  • 30 grams fresh ginger
  • 1000 milliliters vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 milliliters heavy cream (optional)
  • 2 tablespoons fresh parsley (for garnish)

Directions

Step 1

Peel and roughly chop the carrots, onion, garlic, and ginger.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 4

Add the garlic and ginger to the pot and sauté for another 1-2 minutes, stirring frequently to avoid burning.

Step 5

Add the chopped carrots to the pot and mix well.

Step 6

Pour in the vegetable broth, bring to a boil, then reduce the heat to a simmer.

Step 7

Cover the pot and let the mixture cook for 20 minutes, or until the carrots are tender when pierced with a fork.

Step 8

Remove the pot from the heat and allow it to cool slightly.

Step 9

Using an immersion blender or a countertop blender, puree the soup until smooth and creamy.

Step 10

Return the soup to the pot, and season with salt and black pepper to taste. If desired, stir in heavy cream for a richer texture.

Step 11

Reheat the soup gently over low heat if needed, but do not bring it to a boil if cream is added.

Step 12

Serve the soup hot, garnished with chopped parsley on top.
