Ingredients

  • 6 medium carrots
  • 1 medium onion
  • 2 large garlic cloves

  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup fresh cilantro leaves
  • 1 tablespoon lime juice
  • 0.25 teaspoon optional red chili flakes
  • 1 cup water

Directions

Step 1

Peel and chop the carrots into small pieces for quicker cooking. Dice the onion, mince the garlic, and grate the ginger.

Step 2

Heat the coconut oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Add the minced garlic and grated ginger to the pot, cooking for another 1-2 minutes until fragrant.
