Ingredients

  • 500 grams Carrots
  • 3 medium Shallots
  • 2 pieces Garlic cloves
  • 3 pieces Red chili peppers
  • 2 medium Tomatoes
  • 1 teaspoon Tamarind paste
  • 1 tablespoon Palm sugar or brown sugar
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 100 milliliters Water

Directions

Step 1

Peel and julienne the carrots into thin strips, about 5 cm long. Set aside.

Step 2

Slice the shallots, garlic, and red chili peppers thinly. Chop the tomatoes into small pieces.

Step 3

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 4

Add the sliced shallots, garlic, and chili peppers to the pan and stir-fry until fragrant, about 3 minutes.

Add the chopped tomatoes to the pan and cook until softened, about 5 minutes.
