Ingredients

  • 2 medium-sized Carrots
  • 1.5 cups Plain yogurt
  • 1 teaspoon Cumin seeds
  • 0.25 teaspoon Black pepper powder
  • 0.5 teaspoon Salt
  • 1 small Green chili
  • 2 tablespoons Fresh cilantro leaves
  • 1 teaspoon Oil

Directions

Step 1

Wash and peel the carrots. Grate them finely using a box grater or a food processor.

Step 2

Finely chop the green chili and fresh cilantro leaves. Set them aside.

Step 3

Heat a small pan over medium heat. Add the oil and cumin seeds. Allow the seeds to sputter and release their aroma (about 30 seconds). Remove from heat.

Step 4

In a mixing bowl, whisk the yogurt until smooth and creamy.

Step 5

Add the grated carrots, chopped green chili, and salt to the yogurt. Mix well to combine.

Step 6

Pour the tempered cumin seeds and oil into the yogurt mixture and stir to evenly distribute the flavors.

Step 7

Sprinkle the black pepper powder and garnish with freshly chopped cilantro leaves.

Step 8

Chill in the refrigerator for at least 15 minutes before serving for the best flavor.

Step 9

Serve the carrot raita cold as a side dish with pulao, biryani, or any Indian bread.
