Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons ground ginger
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 0.5 cups brown sugar, packed
  • 0.25 cups granulated sugar
  • 1 large egg
  • 1 teaspoons vanilla extract
  • 1 cups carrots, finely grated
  • 0.75 cups raisins
  • 0.5 cups chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the flour, cinnamon, nutmeg, ginger, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg and vanilla extract until fully incorporated, scraping down the sides of the bowl as needed.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

Step 6

Fold in the grated carrots, raisins, and optional chopped walnuts until evenly distributed in the dough.

Step 7

Using a tablespoon or cookie scoop, drop heaping spoonfuls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers appear set.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy the cookies warm or store them in an airtight container at room temperature for up to 5 days.
