  • 0.75 cups light brown sugar, packed
  • 0.25 cups granulated sugar
  • 1 large egg
  • 1 teaspoons vanilla extract
  • 1 cup carrots, grated
  • 0.5 cups raisins
  • 0.5 cups walnuts or pecans, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium mixing bowl, whisk together the flour, rolled oats, baking soda, cinnamon, nutmeg, and salt. Set aside.
