  • 0.25 cups Brown sugar, packed
  • 0.5 cups Vegetable oil
  • 0.5 cups Plain yogurt (or sour cream)
  • 2 Large eggs
  • 1 teaspoons Vanilla extract
  • 2 cups Carrots, finely shredded
  • 0.75 cups Raisins
  • 0.5 cups Walnuts or pecans, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a separate medium-sized bowl, combine the granulated sugar, brown sugar, vegetable oil, yogurt, eggs, and vanilla extract. Whisk until smooth and well combined.
