  • 0.5 cup Unsalted butter
  • 0.5 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 1 cup Finely grated carrots
  • 0.5 cup Chopped pecans
  • 0.5 cup Rolled oats

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
