Ingredients

  • 4 medium carrots
  • 1 large orange
  • 0.5 cup orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh ginger
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon sesame seeds
  • 2 stalks green onions

Directions

Step 1

Peel the carrots and slice them diagonally into thin, even pieces.

Step 2

Zest the orange to yield about 1 teaspoon of zest. Juice the orange to get approximately 1/2 cup of freshly squeezed juice.

Step 3

In a small bowl, whisk together the orange juice, soy sauce, honey or maple syrup, grated ginger, and orange zest.

In another small bowl, dissolve the cornstarch in 2 tablespoons of water and set aside.
