Ingredients

  • 500 grams carrots
  • 240 ml orange juice
  • 500 ml vegetable stock
  • 1 medium onion
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon orange zest
  • 2 tablespoons cream (optional for garnish)
  • 1 tablespoon fresh parsley (optional for garnish)

Directions

Step 1

Peel and roughly chop the carrots, onion, and garlic cloves.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Add the chopped onion and garlic to the pot and sauté for 3-4 minutes until softened and fragrant.

Step 4

Stir in the ground ginger, salt, and black pepper, cooking for an additional minute.

Step 5

Add the carrots to the pot and pour in the vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.

Step 6

Remove the pot from heat and let cool slightly before blending.

Step 7

Using an immersion blender or a countertop blender, puree the soup until smooth.

Step 8

Stir in the orange juice and orange zest, mixing well. Taste and adjust seasoning if necessary.

Reheat the soup gently over low heat if needed, taking care not to boil.

Step 10

Serve warm, garnished with a drizzle of cream and fresh parsley if desired.
