  • 1 cup Rolled oats
  • 1 cup All-purpose flour

  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 0.5 cup Brown sugar
  • 2 cups Carrots, grated
  • 2 pieces Eggs, large
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Milk (any kind, dairy or non-dairy)
  • 1 teaspoon Vanilla extract
  • 0.25 cup Vegetable oil (or melted coconut oil)
  • 0.5 cup Chopped walnuts (optional)
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease each cup.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir until well mixed.

In a separate bowl, whisk together the brown sugar, eggs, unsweetened applesauce, milk, vanilla extract, and vegetable oil until smooth.

Gradually add the wet ingredients into the dry ingredients and stir until combined. Do not overmix; the batter will be slightly thick.
