Ingredients

  • 4 large Carrots
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Lemon juice
  • 1 tablespoon Chopped parsley (optional for garnish)

Directions

Step 1

Wash and peel the carrots. Using a spiralizer, julienne peeler, or vegetable peeler, create long, thin strands or ribbons to resemble noodles. Set aside.

Step 2

Mince the garlic cloves finely and set aside.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Once the oil is heated, add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn the garlic.

Add the carrot noodles to the skillet and toss gently to coat them in the oil and garlic mixture.
