  • 1.75 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Salt
  • 0.75 cups Granulated sugar
  • 0.25 cups Light brown sugar, packed
  • 1.5 cups Carrots, finely grated
  • 1 medium Apple, grated (peeled if desired)
  • 2 large Eggs
  • 0.5 cups Vegetable oil
  • 1.5 teaspoons Vanilla extract
  • 0.25 cups Milk
  • 0.5 cups Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the tin lightly.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3

In a separate bowl, mix the granulated sugar, brown sugar, oil, and eggs until smooth. Stir in the vanilla extract and milk.

Step 4

Add the wet ingredients to the dry ingredients and mix gently until just combined. Be careful not to overmix.

Step 5

Fold in the grated carrots and grated apple until evenly distributed. If using, stir in the chopped walnuts or pecans.

Step 6

Fill the muffin cups about 3/4 full with the batter, distributing it evenly among the 12 cups.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve the muffins warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
