  • 0.5 cup Vegetable oil
  • 0.33 cup Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1.5 cups Carrots, grated
  • 0.5 cup Raisins (optional)
  • 0.5 cup Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.
