Ingredients

  • 2 medium carrots
  • 2 large jalapenos
  • 3 garlic cloves
  • 0.5 cup fresh cilantro
  • 3 tablespoons lime juice
  • 0.25 cup orange juice
  • 0.25 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons water

Directions

Step 1

Peel and slice the carrots into thin rounds for quicker cooking.

Step 2

Slice the jalapenos in half lengthwise and remove the seeds for a milder marinade. Leave the seeds if you prefer more heat.

Step 3

Bring a small pot of water to boil. Add the carrot slices and jalapenos. Cook for 8-10 minutes, or until the carrots are fork-tender.

Step 4

Drain the cooked carrots and jalapenos. Allow them to cool slightly before blending.

Step 5

In a blender or food processor, combine the cooked carrots, jalapenos, garlic cloves, fresh cilantro, lime juice, orange juice, olive oil, ground cumin, salt, black pepper, and water.

Step 6

Blend on high until smooth, scraping down the sides as needed. If the marinade is too thick, add an additional tablespoon of water to reach your desired consistency.

Step 7

Taste and adjust seasoning as needed, adding more salt, lime juice, or cilantro to suit your preference.

Step 8

Transfer the finished marinade to a jar or airtight container. Let it cool completely before using or storing.

Step 9

Use the marinade on your preferred protein or vegetables, allowing them to sit in the mixture for at least 1-2 hours for best flavor absorption. It can also be used as a sauce or dressing directly.

Step 10

Store any leftover marinade in the refrigerator for up to 5 days.
