Directions

Step 1

Peel and dice the carrots, potatoes, and onion into small cubes. Slice the celery into thin pieces and mince the garlic cloves.

In a large soup pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for 2-3 minutes until fragrant.
