Ingredients

  • 4 medium Carrots
  • 1 tablespoon Fresh ginger
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Olive oil
  • 1 teaspoon Soy sauce
  • 1 teaspoon Honey
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Fresh cilantro
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Peel and trim the carrots. Using a box grater or food processor with a shredding attachment, shred the carrots and transfer them to a large mixing bowl.

Step 2

Peel the fresh ginger and finely grate it. Add it to the bowl with the carrots.

Step 3

In a small bowl, whisk together the rice vinegar, olive oil, soy sauce, honey, salt, and black pepper until emulsified.

Step 4

Pour the dressing over the shredded carrots and toss until well coated.

Step 5

Toast the sesame seeds in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until golden brown and fragrant. Remove from heat and let cool slightly.

Step 6

Chop the fresh cilantro and add it along with the toasted sesame seeds to the salad. Gently toss to combine.

Step 7

Adjust seasoning to taste, adding more salt or pepper if needed.

Step 8

Serve the salad immediately or refrigerate for up to 2 hours to allow the flavors to meld. Toss again before serving.
