Ingredients

  • 3 medium carrots
  • 1 cup shelled edamame
  • 2 stalks green onions
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons low-sodium soy sauce
  • 1.5 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 0.5 teaspoon fresh ginger
  • 1 clove garlic
  • 0.25 teaspoon red pepper flakes

Directions

Step 1

Peel and julienne the carrots into thin strips using a sharp knife, julienne peeler, or mandoline slicer. Place the carrots in a large mixing bowl.

Step 2

Bring a small pot of water to a boil and blanch the shelled edamame for 2-3 minutes until tender but still firm. Drain and rinse with cold water to stop the cooking process. Add the edamame to the bowl with the carrots.

Thinly slice the green onions and add them to the bowl.
