Ingredients

  • 6 medium carrots
  • 1 medium onion
  • 2 large garlic cloves
  • 4 cups vegetable broth

  • 0.5 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice
  • 1 cup water

Directions

Step 1

Peel and chop the carrots into small pieces for faster cooking. Dice the onion and mince the garlic cloves.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft and translucent.

Add the minced garlic, ground ginger, and ground coriander to the pot. Cook for 1-2 minutes, stirring frequently to release the spices' aroma.
